Ingredients

  • 1 lb Ground beef
  • 14.5 oz Beef broth (1 can)
  • 15 oz Kidney beans (1 can, drained)
  • 15 oz Black beans (1 can, rinsed and drained)
  • 14.5 oz Petite diced tomatoes (1 can; include liquid)
  • 15 oz Corn (1 can; include liquid)
  • 10 oz Rotel diced tomatoes and green chilies (1 can; Original)
  • 1 oz Ranch seasoning mix (1 packet; alternatively, use 3 tablespoons homemade ranch dressing mix)
  • 1 oz Taco seasoning mix (1 packet; alternatively, use 3 tablespoons homemade copycat Taco Bell seasoning)
  • 1.5 tsp Onion powder
  • 0.5 tsp Salt
  • 0.125 tsp Cayenne pepper (Optional)
  • Sour cream (For topping; amount not specified)
  • Shredded cheddar (For topping; amount not specified)
  • Green onions (Chopped, for topping; amount not specified)
  • Fritos (For topping; amount not specified)

Steps

  1. 1

Gather and measure the ingredients. Place the ground beef in the Instant Pot.

  2. 2

Select the Sauté setting and brown the beef for 5–7 minutes.

  3. 3

Cancel the Sauté setting and drain the grease from the pot.

  4. 4

In a small bowl, combine the ranch seasoning, taco seasoning, onion powder, salt, and optional cayenne pepper.

  5. 5

Add the beef broth, drained kidney beans, rinsed and drained black beans, corn with its liquid, and the seasoning mixture to the Instant Pot. Stir to combine thoroughly.

  6. 6

Add the diced tomatoes with their liquid and the Rotel to the center of the mixture, avoiding the sides of the Instant Pot.

  7. 7

Secure the lid. Select Pressure Cook on High Pressure and set the cook time to 8 minutes. The pot begins preheating about 10 seconds after the settings are selected.

  8. 8

When the cook time is complete, quick-release the pressure before removing the lid.

  9. 9

Let the soup cool for 5 minutes, then stir it.

  10. 10

Ladle into bowls and top with sour cream, shredded cheddar, chopped green onions, and Fritos, as desired.

Notes

The Instant Pot takes approximately 15 minutes to reach pressure before the selected 8-minute cooking time begins. The structured recipe lists 23 minutes total; actual elapsed time may be longer. To freeze, cool the soup before adding toppings, then transfer it to a freezer-safe container or bag. The source also advises that this quantity may be too large to double in an Instant Pot.
