Ingredients
- 1 Ripe avocado (ripe to overripe; no under ripe)
- 0.25 cup Maple syrup
- 0.33 cup Brown sugar
- 2 Eggs
- 1 tsp Baking soda
- 1 tsp Salt (referred to as OCEAN salt)
- 3 tbsp Butter
- 1 tsp Vanilla extract
- 6 tbsp Cocoa powder (1/4 cup plus 2 tbsp)
- 0.5 cup Almond flour
- Chocolate chips (mixture of white and milk chocolate; measure with your heart)
Steps
- 1
Preheat your oven to 325°F (162°C).
- 2
Add the avocado, maple syrup, brown sugar, eggs, baking soda, salt, butter, vanilla, cocoa powder, and almond flour into a food processor.
- 3
Process the mixture until everything is completely combined and smooth. Scrape down the sides of the bowl with a spatula if necessary to ensure no lumps remain.
- 4
Grease an 8.5" x 7" baking pan with butter or oil.
- 5
Pour the brownie batter into the prepared pan and gently bang the pan on the counter to remove any excess air bubbles.
- 6
Sprinkle a combination of white and milk chocolate chips over the top of the batter.
- 7
Bake at 325°F (162°C) for 18-20 minutes. The brownies are done when a toothpick inserted into the center comes out smooth. Be careful not to overbake.
- 8
Allow to cool slightly before serving. Serve with a glass of milk.
Notes
The author recommends using an 8.5" x 7" pan. Ensure the avocado is ripe or overripe for the best texture; underripe avocados will not blend smoothly. Do not overbake to maintain the fudgy consistency.
