Chicken Caesar Smash Tacos

Ingredients
- 2 lb minced chicken (ground chicken)
- 10 mini tortillas (flour or corn)
- salt (to taste)
- black pepper (to taste)
- 1 tbsp cooking oil (for skillet)
- 1 cup mayonnaise (for dressing)
- 2 tsp Dijon mustard
- 3 tbsp olive oil (for dressing)
- 1 tsp Worcestershire sauce
- 2 tsp lemon juice (freshly squeezed)
- 3 cloves garlic (freshly minced)
- 1 head romaine lettuce (large, diced)
- 0.33 cup parmesan cheese (shredded or shaved)
- 1 cup croutons

Divide the 2 lbs of minced chicken into 10 equal portions (roughly 3.2 oz each).

Place one portion (about 2-3 tablespoons) of ground chicken in the center of a mini tortilla. Press the meat down firmly and evenly with your fingers or a spatula until it covers the surface of the tortilla in a thin layer. Repeat for all 10 tortillas.

Generously season the chicken side of each tortilla with salt and black pepper.

In a small mixing bowl, whisk together the 1 cup mayonnaise, 2 tsp Dijon mustard, 1 tsp Worcestershire sauce, 2 tsp lemon juice, minced garlic, salt, and 1 tsp black pepper.

While whisking constantly, slowly drizzle in the 3 tbsp of olive oil. Continue whisking until the dressing is smooth, creamy, and fully emulsified.

Heat a large skillet over high heat and add a small amount of oil to coat the bottom.

Place the tortillas meat-side down into the hot skillet. Reduce the heat to medium-low and cook for 2-3 minutes. The chicken should be fully cooked through and have a nice browned crust.

Flip the tacos so the tortilla side is down. Cook for another 1-2 minutes until the tortilla is crispy and golden brown. Remove from the skillet.

Top each hot taco with a handful of diced romaine lettuce, a sprinkle of shaved parmesan cheese, and a few croutons.

Drizzle the prepared Caesar dressing over the top of each taco and serve immediately while the chicken is hot and the lettuce is crisp.
Notes
For the best results, ensure the chicken layer is thin so it cooks quickly and evenly before the tortilla burns. You can use store-bought Caesar dressing if in a rush, but the homemade version provided is much more flavorful.
