Ingredients

  • 2 sourdough bread (thickly sliced)
  • 2 tbsp unsalted butter (softened, for the crust)
  • 0.5 tsp garlic powder (for the crust mixture)
  • 2 tbsp shredded cheese (finely shredded, for the crust mixture)
  • 1 slice provolone cheese
  • 1 slice Colby Jack cheese
  • 1 tbsp cream cheese (softened, for the filling spread)
  • 1 tbsp mayonnaise (for the filling spread)
  • dried spices (a blend of garlic powder, onion powder, and dried parsley suggested)
  • 1 slice Havarti cheese
  • 1 tbsp unsalted butter (for the pan)

Steps

  1. 1

Thickly slice your sourdough bread into two even slices.

  2. 2

In a small bowl, mix together the softened butter, garlic powder, and shredded cheese until a paste forms.

  3. 3

Spread the garlic-cheese butter mixture evenly onto the outer side of each bread slice.

  4. 4

On the inner side of one slice, place one slice of provolone and one slice of Colby Jack cheese.

  5. 5

In another small bowl, whisk together the cream cheese and mayonnaise with the listed spices (garlic powder, onion powder, and herbs) until smooth.

  6. 6

Spread the cream cheese mayo mixture over the cheese slices already on the bread.

  7. 7

Top the spread with a slice of Havarti cheese and place the second slice of sourdough on top, buttered side facing out.

  8. 8

Melt a tablespoon of butter in a skillet or 'Always Pan' over medium-low heat.

  9. 9

Add the sandwich to the pan, cover with a lid, and cook until the bottom is golden brown and crispy.

  10. 10

Flip the sandwich and continue to cook, uncovered or covered, until the second side is crispy and all the cheese is thoroughly melted.

Notes

The lid is essential for melting the thick layers of cheese without burning the sourdough. Pair this with a creamy tomato bisque for the classic experience.
