Ingredients

  • 100 ml whole milk
  • 100 g pumpkin puree
  • 100 g unsalted butter

  • 1 tsp ground cinnamon (For the chai sugar)
  • 1 tsp ground ginger (For the chai sugar)
  • 0.5 tsp ground allspice (For the chai sugar)
  • 1 tsp kosher salt (For the chai sugar)
  • 180 g powdered sugar (For the maple glaze)
  • 2 tbsp whole milk (For the maple glaze)
  • 2 tbsp maple syrup (For the maple glaze)
  • 1 tsp vanilla bean paste (For the maple glaze)
  • 0.5 tsp kosher salt (For the maple glaze)

Steps

    Combine the whole milk, pumpkin puree, butter, granulated sugar, cinnamon, and kosher salt in a saucepan. Heat over medium heat until the butter melts and the mixture is hot and smooth.

    Add the flour all at once. Stir vigorously with a wooden spoon over medium heat until the mixture pulls away from the sides of the pan and forms a cohesive dough. Continue cooking briefly until the dough is smooth and a thin film forms on the bottom of the saucepan.

    Transfer the hot dough to a mixing bowl and let it cool until warm rather than hot, so the eggs will not scramble.
