Canadian Cheese Soup
A rich, creamy cheddar soup inspired by the beloved version served at Epcot’s Le Cellier steakhouse. Bacon, aromatics, and a pale lager give it a savory depth, with optional green onion or chives to finish.

Ingredients
- 0.5 lb bacon (chopped)
- 1 onion (medium, finely chopped)
- 3 celery ribs (finely chopped)
- 2 garlic (cloves, minced)
- 4 tbsp butter
- 1 cup all-purpose flour
- 3 cup chicken stock
- 4 cup milk
- 1 lb sharp cheddar cheese (grated)
- 1 tbsp Tabasco sauce
- 1 tbsp Worcestershire sauce
- 0.5 cup pale or golden lager (preferably Canadian)
- Kosher salt (to taste)
- black pepper (freshly ground, to taste)
- green onion or chives (chopped, optional, for serving)
Steps
- 1
In a large heavy-bottomed pot or Dutch oven, cook the chopped bacon over medium heat until lightly browned, about 5 minutes.
- 2
Add the finely chopped onion and celery, minced garlic, and butter to the pot. Cook until the onion has softened, about 5 minutes.
- 3
Add the flour. Stir constantly and cook until it begins to turn golden and smell nutty, about 4 minutes.
- 4
Whisk in the chicken stock and bring the mixture to a boil.
- 5
Let it boil for 1 minute, then reduce the heat to a simmer. Cook for 15 minutes, stirring occasionally.
- 6
Add the milk and continue simmering for 15 minutes. Do not let the soup boil after adding the milk.
- 7
Remove the pot from the heat. Stir in the grated cheddar, Tabasco sauce, Worcestershire sauce, kosher salt, and freshly ground black pepper.
- 8
Blend the soup with an immersion blender until it is mostly smooth.
- 9
Stir in the lager and adjust the seasoning as needed.
- 10
Serve the soup garnished with chopped green onion or chives, if using.
Notes
The site notes that white cheddar is used at Le Cellier and suggests serving the soup in a bread bowl. Its ingredient list specifies sharp cheddar. Recipe adapted from Disney Parks Blog.
