- 0.5 Onion (diced)
- 1 stalk Green onion (chopped)
- 0.5 cup Kimchi (chopped)
- 1 bowl Cooked rice (preferably day-old rice)
- 2 tbsp Soy sauce
- 2 tbsp Cooking wine (mirin or matsool)
- 1 tsp Sugar
- 1 tsp Red pepper powder (gochugaru)
- 1 tbsp Sesame oil
- Sesame seeds (for garnish)

Dice the Spam into bite-sized cubes. Place them in a pan over medium heat and grill until the edges are golden brown and crispy.

Add the diced onion, chopped green onion, and chopped kimchi to the pan with the Spam. Stir-fry until the onions become translucent and the kimchi is fragrant.

Add the cooked rice to the pan, breaking up any clumps with a spatula.

Season the mixture by adding 2 tablespoons of soy sauce, 2 tablespoons of cooking wine, sugar, and red pepper powder.

Stir-fry everything together thoroughly until the rice is evenly coated with the seasonings and well-combined with the other ingredients.

Drizzle with sesame oil and toss one last time to incorporate the aroma.

Serve the fried rice hot, garnished with a sprinkle of sesame seeds on top.
Notes
For the best texture, use cold, day-old rice. If the kimchi is very sour, you can add a bit more sugar to balance the acidity.
