Ingredients

  • 1 cup all-purpose flour (plus more for rolling)
  • 0.5 tsp salt (plus more for sprinkling, if desired)
  • 4 tbsp unsalted butter (cold and cut into small pieces)
  • 2 tbsp milk (cold; add just enough to bring the dough together)
  • 4 oz extra-sharp white cheddar cheese (finely grated)

Steps

  1. 1

Grate the extra-sharp white cheddar finely. Cut the cold butter into small pieces and keep it chilled until ready to use.

  2. 2

Add the flour, salt, cold butter, and grated cheddar to a food processor. Pulse until the mixture resembles coarse crumbs and the butter is evenly distributed.

  3. 3

Add the cold milk and pulse just until the mixture begins to form a cohesive dough. Do not overmix.

  4. 4

Turn the dough onto a lightly floured work surface and gently press it together. Flatten it into a disk, wrap it, and refrigerate for about 30 minutes so it becomes firm and easier to roll.

  5. 5

Preheat the oven to 375°F (190°C) and line one or two baking sheets with parchment paper.

  6. 6

Roll the chilled dough out very thin, approximately 1/8 inch (3 mm) thick. Use a small square cookie cutter or knife to cut the dough into cracker-sized squares.

  7. 7

Transfer the squares to the prepared baking sheets, leaving a little space between them. Prick the center of each cracker with a toothpick or skewer to create the characteristic Cheez-It-style hole.

  8. 8

Bake for 12 to 15 minutes, rotating the baking sheet halfway through, until the crackers are golden around the edges and crisp.

  9. 9

Let the crackers cool completely on the baking sheet. They will become crisper as they cool; store them in an airtight container.

Notes

The source provides the ingredient types but no measurements or written method. Quantities, timing, temperature, yield, and technique are estimated from a standard homemade cheese-cracker method. Roll the dough thinly for maximum crispness and avoid overbaking the white cheddar, which can darken quickly.
