Fake Protein Pizza in the Air Fryer
A soft, protein-rich base made with whipped egg whites and rice flour, cooked in an air fryer and topped with tomato sauce and protein mozzarella. It is a light “fake pizza” designed for a high-protein meal.

Ingredients
- 200 ml Egg whites (Whipped to stiff peaks)
- 30 g Rice flour
- 5 g Salt (Plus an optional pinch for seasoning, to taste)
- Garlic, pepper, or other spices (To taste)
- 90 g Tomato sauce (For topping the base)
- 70 g Protein mozzarella (Alternatively, use 150 g of protein cottage cheese; the author used mozzarella)
- 150 g Protein cottage cheese (Alternative to protein mozzarella; do not use together with the mozzarella)

Whip the egg whites in a bowl until they form a white, foamy, stable mixture. To check the consistency, carefully turn the bowl upside down: the egg whites should not slide out.

Add the rice flour, salt, and the desired garlic, pepper, or other spices. Fold them in with a wooden spoon using gentle bottom-to-top movements, avoiding vigorous stirring so the egg whites do not deflate.

Line the air fryer basket or a suitable air fryer accessory with parchment paper. Pour the batter onto the paper and spread it into the desired shape, keeping the thickness even.

Cook the base in the air fryer at 180 °C for 10 minutes. The surface should be set and firm enough to remove and top.

Carefully remove the par-cooked base. Spread the tomato sauce over it, then add the protein mozzarella or protein cottage cheese. Finish with a pinch of salt and pepper, if desired.

Return the pizza to the air fryer and cook again at 180 °C for another 10 minutes, until the topping is hot and the mozzarella is melted or the cottage cheese is thoroughly heated.

Serve immediately. For a more substantial version, add vegetables to taste or other protein sources compatible with your nutritional goals.
Notes
The recipe indicates approximately 334 kcal for the entire pizza, with 4.7 g of fat, 34.1 g of carbohydrates, and 37.7 g of protein; the values may vary depending on the brand of mozzarella or cottage cheese. The parchment paper must be suitable for air fryers and must not obstruct air circulation.
