Ingredients
- 70 g apple (diced finely approx 1/4 inch thick, about 2 small apples)
- 1 egg (large)
- 1 tbsp coconut oil (melted)
- 1 tsp cinnamon
- 0.125 tsp baking powder
- 25 g porridge oats (approx 1/4 cup)
- 25 g fine rice flour (approx 1/4 cup)

Preheat the oven to 190°C/180°C fan.

In a bowl, crack the egg and add in the melted coconut oil. Whisk until combined.

Dice the apples very finely (approx quarter of an inch thick) and add to the bowl.

Mix in the cinnamon and add oats, rice flour and baking powder, mixing until combined.

Line a baking tray. Scoop a heaped tablespoon of the batter for each fritter.

Bake for 12-14 minutes or until golden brown and cooked through.

Optionally, drizzle with sugar-free icing or dust with extra cinnamon.
Notes
For the best texture, dice apples very finely (1/4 inch) to ensure they soften and release natural sugars. You can leave the skin on one apple for extra fiber and bite. If you prefer a sweeter fritter, add 1 tablespoon of maple syrup, honey, or coconut sugar to the batter. Store in an airtight container for 24 hours at room temperature or 3-4 days in the fridge. Reheat in an oven or air fryer to restore crispness.
