The Best Quark Cake with Crispy Butter Streusel from a Springform Pan

- 150 g cold butter (cut into small pieces)
- 300 g flour (plus a little more for dusting the pan)
- 120 g sugar (for the streusel dough)
- 1 Päckchen vanilla sugar
- 1 egg (for the streusel dough)
- salt (a pinch)
- 1 egg (for the quark filling)
- 190 g sugar (for the quark filling)
- 500 g low-fat quark
- 1 Päckchen vanilla pudding powder
- 2 EL lemon juice
- 40 g raisins (optional)

Begin by greasing the springform pan and dusting it thoroughly with flour. Preheat the oven to 180 °C (top/bottom heat).

Cut the butter into small pieces and place in a bowl with all the other ingredients for the streusel dough (flour, 120g sugar, vanilla sugar, 1 egg, salt).

Knead everything into a smooth dough.

Now spread two-thirds of the streusel dough over the bottom of the springform pan and press it down. Pull it up slightly at the edges as well.

For the quark filling, whisk the second egg and 190g sugar until creamy.

Then stir in the quark and lemon juice. Tip: At this step, you can optionally add the raisins to the mixture.

Afterwards, sift in the pudding powder and stir.

Now pour the quark filling into the springform pan.

Distribute the remaining streusel dough in small pieces over the top of the quark cake.

Bake on the middle rack for approx. 40 minutes.

The quark cake must cool down completely before slicing. Pro tip: Turn off the oven after the baking time and open the door just a crack at first. Let the cake sit in the pan for about 10 minutes before taking it out to prevent cracks.
Notes
Pro tip: A sharp change in temperature can encourage cracks. Let the cake cool slowly in the slightly opened oven. The cake freezes well; ideally in slices with parchment paper in between. Serving suggestion: Enjoy with fresh berries or a splash of eggnog.
