Ingredients
- 150 ml Sweet soy sauce (kecap manis)
- 50 ml Soy sauce
- 30 ml Distilled white vinegar or rice vinegar (Use distilled white vinegar or rice vinegar.)
- 2 tl Galangal powder
- 2 tl Ground ginger
- 2 tl Ground cumin
- 1 Chicken bouillon cube
- 3 cm Fresh ginger (Finely chopped or grated; approximately 15 g.)
- 2 teentjes Garlic (Finely chopped or pressed.)
- 1 Shallot (Finely chopped; approximately 40 g.)
- 1 tl Sambal
- 1 el Honey
- 4 Chicken thighs (Approximately 600 g raw, preferably skinless and boneless for even cooking.)
Steps
- 1
Finely chop or grate the fresh ginger, finely chop the garlic and shallot, and crumble the chicken bouillon cube.
- 2
Place the chicken thighs in the slow cooker.
- 3
Add the sweet soy sauce, soy sauce, and distilled white vinegar or rice vinegar.
- 4
Add the galangal powder, ground ginger, ground cumin, and crumbled bouillon cube.
- 5
Add the ginger, garlic, shallot, sambal, and honey.
- 6
Gently stir the ingredients so that the chicken is coated all over with the sauce and spices. Cover the slow cooker with the lid.
- 7
Cook the chicken in the slow cooker for nearly four hours on your appliance's low setting. The chicken is ready when it is very tender and almost falling apart; if in doubt, check that the internal temperature is at least 74 °C.
- 8
Carefully remove the chicken from the slow cooker and stir the sauce.
- 9
Serve the chicken with the sweet soy sauce.
- 10
Serve with rice and, if desired, atjar, green beans, yardlong beans, or a fresh cucumber salad.
Notes
The description does not specify an exact slow cooker setting; the chicken cooked for nearly four hours in the video. Optionally serve with rice and a fresh vegetable component to balance the sweet-and-savory sauce.
