Ingredients

  • 1 mango (cut into chunks)
  • 1 cup rolled oats
  • 2 tbsp chia seeds (optional)
  • 1 cup coconut milk (canned or carton)
  • 0.5 cup water
  • 0.25 cup Greek yogurt
  • 1 tsp vanilla extract
  • 1 tsp honey
  • salt (sprinkle)

Steps

  1. 1

In a large jar or airtight container, combine the 1 cup of rolled oats and 2 tablespoons of chia seeds.

  2. 2

Add 1 cup of coconut milk, 1/2 cup of water, 1/4 cup of Greek yogurt, 1 teaspoon of vanilla extract, 1 teaspoon of honey, and a sprinkle of salt.

  3. 3

Stir the mixture thoroughly until all ingredients are well combined and the oats are fully submerged.

  4. 4

Gently fold in the mango chunks, or layer them on top if preferred.

  5. 5

Seal the container and refrigerate for at least 4 hours, or ideally overnight, to allow the oats and chia seeds to soften and absorb the liquid.

  6. 6

Before serving, give the oats a quick stir and add an extra splash of coconut milk or water if the consistency is too thick.

Notes

For extra texture, consider topping with toasted coconut flakes or sesame seeds before serving. If you prefer a lower calorie version, some users suggest omitting the oats, though this will change the consistency to more of a chia pudding.
