Slow Cooker Chicken & Vegetables

Ingredients
- 1.5 lb chicken thighs or breast (cut into bite-sized pieces)
- 1 onion (chopped)
- 3 clove garlic (minced)
- 2 bell peppers (sliced)
- 2 carrots (sliced into rounds)
- 1 tbsp ginger (freshly grated)
- 0.5 tsp salt (to taste)
- 0.25 tsp black pepper
- 2 tbsp rice vinegar
- 0.33 cup soy sauce (low sodium recommended)
- 0.25 cup water
- 2 cup fresh broccoli (cut into florets)

Add the chicken thighs (or breast), chopped onion, minced garlic, sliced bell peppers, and carrots to the slow cooker.

Add the grated ginger, salt, pepper, rice vinegar, water, and soy sauce to the slow cooker.

Cover and cook on high for 2 to 3 hours, or on low for 4 to 6 hours.

During the last 30 minutes of the cooking time, stir in the fresh broccoli florets.

Replace the lid and continue cooking until the broccoli is tender and the chicken is fully cooked through.
Notes
Stirring the broccoli in at the end prevents it from becoming mushy. Serve over rice or cauliflower rice for a complete meal.
