Ingredients
- 47 g vanilla splits
- 0.33 cup water
- 0.75 cup alcohol (Use inexpensive alcohol; the source does not specify its type.)
- 1 cup sugar (Slightly rounded, heaping cup.)
- 2 tbsp corn syrup
- 0.25 tsp xanthan gum
Steps
- 1
Put the 47 g of vanilla splits into a blender.
- 2
Add the water, alcohol, sugar, and corn syrup to the blender.
- 3
Blend on high for at least 2 minutes, until the mixture is dark and very fine and smooth.
- 4
Add the xanthan gum to the blended paste; it helps keep the vanilla caviar suspended.
- 5
Mix on low to incorporate the xanthan gum, then stop blending.
- 6
Pour the paste into a large jar or divide it among four gift bottles. It makes about 1 pint.
- 7
Let the paste sit so it can thicken.
Notes
The source does not specify the type of alcohol. It says the paste thickens as it sits but gives no setting time. It can be substituted one-to-one for vanilla extract and used in baking or beverages.
