  • 16 oz unsalted roasted peanuts (Re-roast before blending.)
  • 1 tsp salt
  • 1 tsp honey (Optional, for sweetness.)

    Preheat the oven to 400°F (200°C). Spread the unsalted roasted peanuts in a single layer on a baking sheet and roast them for 5 minutes. This boosts their flavor and helps release their natural oils.

    Transfer the hot roasted peanuts to a blender or food processor. Blend on high until the peanuts break down into a coarse, grainy mixture.

    Stop the machine and scrape down the sides of the blender or food-processor bowl with a spatula so the mixture blends evenly.

    Blend again on high until the peanuts become smooth and creamy. Scrape the sides again if needed; the mixture may pass through a thick, crumbly stage before the released oils turn it into peanut butter.

    Add the salt and, if using, the honey. Blend once more until fully incorporated and smooth.

    Transfer the peanut butter to an airtight container. Refrigerate for up to 3 weeks, or keep it at room temperature for 3–5 days if you plan to finish it quickly.
