East German Bandit Skewers
Savory grilled skewers based on an East German recipe, made with diced schnitzel meat, onions, red bell peppers, and bacon. The skewers are marinated in a flavorful mixture of red wine, vinegar, garlic, and thyme, then browned on the grill.

Ingredients
- 350 g schnitzel meat (cut into bite-sized cubes)
- 2 große onions (quartered)
- 2 red bell peppers (washed, seeded, and cut into suitable pieces)
- 50 g bacon (sliced)
- 125 ml water (for the marinade)
- 4 EL red wine (for the marinade)
- 1 EL vinegar (for the marinade)
- 1 Zehe garlic (peeled and finely pressed)
- dried thyme (a little, to taste)
- salt (to taste)
- black pepper (to taste)
- oil (for brushing the skewers)

Prepare all the ingredients. Cut the schnitzel meat into bite-sized cubes, approximately the size of classic shashlik pieces.

Quarter the onions. Wash and seed the red bell peppers, then cut them into suitable pieces.

Cut the bacon into slices.

Thread the meat, onions, bell peppers, and bacon alternately onto wooden or metal skewers. Continue until all the ingredients have been used. The exact number of skewers depends on their length and size.

Pour 125 ml water into a shallow, sufficiently large dish. Stir in the red wine and vinegar.

Add the peeled, finely pressed garlic, along with the dried thyme, salt, and pepper, to the liquid. Mix the marinade thoroughly.

Place the prepared skewers in the marinade. Cover the dish and refrigerate for at least 1 hour so the seasonings can penetrate the meat and vegetables.

Turn the skewers as needed during marination, especially if the dish is not large enough for them to be completely submerged in the marinade. This ensures they are seasoned evenly.

Preheat the grill thoroughly. Remove the skewers from the marinade and allow them to drain well.

Lightly brush each skewer with oil. This helps the ingredients brown better and prevents them from sticking as much to the grill grate.

Grill the skewers on the hot grill for about 15 minutes. Turn them regularly during grilling until the meat is completely cooked through and the onions, bell peppers, and bacon are appetizingly browned.

Notes
These skewers are not a last-minute recipe, as they need to marinate covered in the refrigerator for at least 1 hour. When grilling, make sure the meat is completely cooked through.
