  • 1 cup Whole-milk plain yogurt
  • 1 cup Granulated sugar

  • 1 tsp Lemon zest (finely grated)

  • 2 Pears (peeled, cored, and diced into 1/2-inch pieces (about 2 cups))
  • 0.33 cup Crystallized ginger (finely chopped)
  • 1 cup Powdered sugar (sifted; for glaze)
  • 2 tbsp Lemon juice (freshly squeezed; for glaze)

Steps

    Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan and line the bottom with parchment paper, leaving an overhang on two sides for easy removal.

    In a medium bowl, whisk together the flour, baking powder, ground cardamom, and salt until well combined.

    In a large bowl, whisk together the yogurt, granulated sugar, eggs, lemon zest, and vanilla extract until smooth and blended.

    Gently fold the dry ingredients into the wet ingredients using a spatula just until no streaks of flour remain; do not overmix.
