- 1 jar red pesto (standard jar size, approx 190g)
- 600 ml heavy cream
- 1 tbsp Tuscan seasoning
- 2 packets gnocchi (refrigerated variety preferred, approx 500g per packet)
- 1 cup parmesan cheese (plus extra for serving)
- 120 g spinach leaves (fresh baby spinach)
- chicken sausages (optional; casings removed and meat rolled into small balls)

Preheat your oven to 180ºC (350ºF).

In a large baking dish, add the jar of red pesto, 600ml of cream, and 1 tablespoon of Tuscan seasoning. Stir well to combine the sauce ingredients.

Add the two packets of gnocchi to the dish. If you are using the optional chicken sausage, add the small sausage balls now. Mix thoroughly to ensure everything is well coated in the sauce.

Cover the baking dish tightly with aluminum foil.

Bake in the preheated oven for 40–45 minutes, until the gnocchi are soft and 'chubby'.

Remove the foil and add 1 cup of parmesan cheese and the 120g of spinach leaves. Stir through the hot mixture until the cheese is melted and creamy and the spinach has wilted.

Serve immediately with an extra sprinkle of parmesan cheese on top.
Notes
The author recommends using refrigerated gnocchi (found in the fridge section of the supermarket) rather than shelf-stable ones for the best texture. If using chicken sausages, removing the skins and rolling them into balls creates a meatball-like texture that cooks perfectly in the sauce.
