Ingredients

  • 2 tbsp neutral cooking oil (For sautéing the aromatics and spices)

  • 0.25 cup fresh coriander (Chopped)
  • 3 tbsp corn flour (For the potato mixture and coating slurry)
  • salt (To taste, divided between the patties and sauce)
  • 0.5 cup water (For the corn flour slurry; add gradually to make a dunking consistency)
  • 1.5 cup breadcrumbs (For coating the patties)
  • 2 cup vegetable oil (For frying; the patties will absorb only part of this amount)
  • 0.5 cup mayonnaise (For the orange burger sauce)
  • 2 tbsp ketchup (For the sauce)
  • 1 tsp mustard (For the sauce)
  • 1 tsp vinegar (For the sauce)
  • 1 tsp sugar (For the sauce)
  • 1 tbsp chili sauce (For the sauce; adjust to taste)
  • 4 burger buns (Split; toast if desired)
  • 4 lettuce (Leaves, enough for four burgers)
  • 4 processed cheese slices (One slice per burger)
  • 1 tomato (Thinly sliced)
  • 0.5 red onion (Thinly sliced)

Steps

    Cook and peel the potatoes, then mash them while warm until mostly smooth. Set aside. Prepare the ginger, garlic, and green chili as a fine paste, and chop the coriander.

    Heat 2 tablespoons of neutral oil in a skillet over medium heat. Add the ginger-garlic-green chili paste and sauté for 1–2 minutes, stirring, until fragrant but not browned.

    Add the cooked garden peas to the skillet. Stir in the chili powder, ground coriander, turmeric, cumin, and dry mango powder. Cook for 2–3 minutes so the spices coat the peas and become aromatic.

    Add the mashed potatoes to the spiced pea mixture. Mix thoroughly until the potatoes are evenly seasoned and the mixture holds together.

    Add the chopped fresh coriander, corn flour, and salt. Mix with your hands or a sturdy spoon until you have a cohesive, moldable mixture. If it feels loose, add a little more corn flour.

    Divide the mixture into four equal portions. With lightly moistened or oiled hands, shape each portion into a round, flat patty roughly the diameter of the burger buns.

    In a shallow bowl, whisk the corn flour with the water to make a smooth, pourable slurry with no dry lumps.

    Dip each potato patty into the corn flour slurry, turning it so the surface is covered. Let excess slurry drip off, then press the patty into the breadcrumbs until completely coated.

    Heat the frying oil in a deep skillet or saucepan to approximately 175–180°C / 350–355°F. Test it with a breadcrumb; it should sizzle immediately without burning.

    Carefully lower the coated patties into the hot oil, working in batches so the pan is not crowded. Fry for about 3–4 minutes per side, turning once, until crisp and deep golden brown. Drain on a rack or paper towels.

    Make the sauce by combining the mayonnaise, ketchup, mustard, vinegar, sugar, chili sauce, and a pinch of salt in a bowl. Stir until smooth and uniformly orange. Taste and adjust the salt or chili sauce if needed.

    Split the burger buns and toast the cut sides in a dry skillet if desired. Spread some of the orange sauce over the bottom half of each bun.

    Add lettuce to each sauced bun, followed by one hot potato patty and a cheese slice.

    Top each burger with tomato slices and red onion. Spread more sauce on the cut side of each top bun, place it over the fillings, and serve immediately while the patties are crisp.
