Weights are estimates. Together, the ingredients weigh about 670 g before cooking, which is about 110 g per serving.
Steps
Prepare the snowman bodies by stacking two mozzarella pearls on top of each other. Use a toothpick if necessary to secure them.
Create the snowmen's faces and clothes: use tiny peppercorns or olive bits for eyes and buttons, a small carrot sliver for the nose, and a thin strip of salami wrapped around the 'neck' as a scarf.
Top each snowman with a small triangle of red bell pepper to serve as a festive hat.
On a large wooden board or platter, arrange the cheese snowmen as the centerpiece.
Surround the snowmen with clusters of grapes, handfuls of fresh cranberries, and assorted crackers.
Fill in the gaps with mixed nuts and small cheese stars cut from the white cheddar.
Tuck sprigs of fresh rosemary around the board to mimic evergreen branches and complete the festive look.
Notes
You can use a small star-shaped cookie cutter for the cheese stars. If the snowmen are unstable, a small dab of cream cheese can help act as 'glue' for the hats and buttons.
