Ingredients

  • 800 g Chicken breast (thinly sliced)
  • 4 tbsp Soy sauce (divided)
  • 2 tbsp Cornstarch
  • 1 tsp Baking soda
  • 1 tbsp Dark soy sauce
  • 2 tbsp Oyster sauce
  • 1 tbsp Vinegar (rice vinegar suggested in transcript)
  • 1 tbsp Lao Gan Ma chili crisp
  • 1 tsp Sesame oil
  • 3 cup Cooked jasmine rice
  • 2 cup Frozen veggies (mixed peas, carrots, corn)
  • 2 tbsp Oil (divided)
  • 4 Large eggs
  • 6 Garlic (minced)
  • 3 second spray Canola oil spray
  • 1 stalk Green onion (sliced)

Steps

  1. 1

In a bowl, mix the thinly sliced chicken breast with 2 tablespoons of soy sauce, 2 tablespoons of cornstarch, and 1 teaspoon of baking soda. Let the mixture sit for 15 minutes to velvet the meat.

  2. 2

In a separate small bowl, prepare the stir-fry sauce by mixing the remaining 2 tablespoons of soy sauce, 1 tablespoon of dark soy sauce, 2 tablespoons of oyster sauce, 1 tablespoon of vinegar, 1 tablespoon of Lao Gan Ma chili crisp, and 1 teaspoon of sesame oil.

  3. 3

Heat a large pan or wok over high heat and add 1 tablespoon of oil. Add the marinated chicken and cook until fully cooked and slightly browned. Remove the chicken from the pan and set aside.

  4. 4

In the same pan, add the remaining 1 tablespoon of oil and the 2 cups of frozen vegetables. Cook for 3 to 4 minutes until tender.

  5. 5

Add the 6 cloves of minced garlic to the vegetables and cook for another 30 seconds until fragrant.

  6. 6

Push the vegetables to the side of the pan and spray the empty space with a 3-second spray of canola oil. Add the 4 eggs and scramble them until just set.

  7. 7

Add the 3 cups of cooked jasmine rice, the cooked chicken, and the prepared sauce to the pan. Stir-fry everything together for 2 to 3 minutes, ensuring the rice is well-coated and heated through.

  8. 8

Add the sliced green onion, mix everything together one last time, and serve immediately.
