Healthy Banana Brownie Tiramisu

Ingredients
- 1 banana (ripe; mash well)
- 1 egg
- 2 tbsp cacao powder (plus extra for dusting)
- 1 tsp baking powder
- 30 ml espresso (essential for texture)
- sweetener (of your choice; optional but recommended for the espresso)
- 100 g Greek yogurt
- 1 tbsp sweetener (for the yogurt cream)
- vanilla extract (a splash)

In a container or baking pan, mash the ripe banana well until smooth. If your banana isn't very ripe, add a little sweetener at this stage.

Add the egg, cacao powder, and baking powder to the mashed banana. Mix thoroughly until well combined.

Bake in a preheated oven or air fryer for about 20 minutes. Alternatively, you can microwave the mixture for 3-5 minutes.

Before the brownie base completely cools, use a fork to poke several holes across the surface. Pour the 30ml of espresso (mixed with sweetener if desired) over the top, ensuring it soaks in.

Allow the base to cool completely before adding the topping.

Prepare the yogurt cream by mixing the Greek yogurt, 1 tablespoon of sweetener, and a splash of vanilla extract.

Spread the yogurt cream over the cooled brownie base and dust with a layer of cacao powder.

For the best texture, let the dish chill in the refrigerator for a few hours before serving to allow it to become fudgy and moist.
Notes
Chilling for a few hours is highly recommended for a fudgy, dessert-like texture. Do not skip the espresso soak as it provides essential moisture to the flourless base.
