Make the tzatziki. Combine the vegan skyr alternative, half cucumber, chopped garlic, frozen garden herbs, thyme, sumac, 1½ teaspoons salt, the juice of half a lemon, and olive oil in a bowl. Stir until evenly mixed, then set aside.

Prepare the pickled onions. Combine the vinegar, oil, sugar, ½ teaspoon salt, and water in a small bowl. Add the sliced onion rings, toss to coat, and leave them to pickle while preparing the rest of the meal.

Cook the fries in an air fryer according to the package directions, or until crisp and golden. Cut the cooked fries into bite-sized cubes.

Prepare the fresh vegetables. Cut the remaining cucumber and cherry tomatoes as needed, combine them in a bowl, and toss with the garden herbs.

Cut the salad leaves into strips and prepare the red cabbage and coleslaw so they are ready to assemble.

Sear the vegan döner alternative in a hot skillet according to the package directions, stirring or turning as needed, until heated through and browned at the edges.

Assemble the plate or bowl with the salad leaves, herbed cucumber and tomatoes, red cabbage, coleslaw, crispy fry cubes, and seared vegan döner. Add the pickled onions and serve with the tzatziki. Mix everything together just before eating and enjoy immediately.
Notes
For meal preparation, store the tzatziki and pickled onions separately and combine them with the salad only when serving. To reduce carbohydrates, omit the fries or replace them with roasted chickpeas. Add chili or hot sauce for extra heat.
