Ingredients
- 1 large onion (Cut into rings of your preferred thickness.)
- 4 cup ice water (For soaking the onion rings; most is discarded.)
- 1 cup unsweetened, unflavored plant milk
- 5 tbsp plant-based egg (The author used store-bought JUST Egg. See the author's Mung Bean Egg recipe for an alternative.)
- 1.5 cup arrowroot powder (For the wet batter. Cornstarch or flour may be substituted.)
- 2 tsp Cajun seasoning (For the wet batter.)
- 1 cup arrowroot powder (For the dry batter. Cornstarch or flour may be substituted.)
- 2 tsp Cajun seasoning (For the dry batter.)
- 1 cup panko breadcrumbs (For the breading.)
- 2 tsp granulated garlic (For the panko breading.)
- 1 tsp dried oregano (For the panko breading.)
- salt (To taste, for the panko breading.)
- black pepper (To taste, for the panko breading.)
- avocado oil spray (Use enough to lightly coat the breaded onion rings.)
- dipping sauce (Your choice, for serving.)
Steps
- 1
Cut the onion into rings of your preferred thickness, separating the rings as needed.
- 2
Place the onion rings in a bowl of ice water and soak them for 15 minutes. Drain thoroughly and set the rings aside.
- 3
In a bowl, combine the plant milk, plant-based egg, 1½ cups arrowroot powder, and 2 teaspoons Cajun seasoning to make the wet batter. Stir until evenly combined.
- 4
In a separate bowl, combine 1 cup arrowroot powder and 2 teaspoons Cajun seasoning to make the dry batter.
- 5
In a third bowl, combine the panko breadcrumbs, granulated garlic, dried oregano, salt, and black pepper to make the panko breading.
- 6
Working with one onion ring at a time, coat it thoroughly in the dry batter, shaking off excess.
- 7
Dip the dry-coated onion ring into the wet batter, turning it so the surface is evenly covered and allowing excess batter to drip back into the bowl.
- 8
Transfer the ring to the panko mixture and press or turn it gently until fully coated. Repeat with the remaining onion rings.
- 9
Arrange the breaded onion rings in the air-fryer basket in a single layer, working in batches if necessary. Lightly spray them with avocado oil.
- 10
Air-fry at 350°F (175°C) for about 12–15 minutes, or until the coating is golden and crisp. Serve immediately with your favorite dipping sauce. Alternatively, deep-fry at 370°F (188°C).
Notes
The source specifies air-frying at 350°F for approximately 12–15 minutes. For a deep-fried version, use 370°F. Cornstarch or flour can be used instead of arrowroot powder.
