  • 1 large egg (Room temperature)
  • 4 cup all-purpose flour (Plus more only if needed; dough should remain soft and slightly tacky)

  • 0.5 cup unsalted butter (Very soft; for the filling)
  • 1 cup light brown sugar (Packed; for the filling)
  • 2 tbsp ground cinnamon (For the filling)
  • 4 oz cream cheese (Softened; for the frosting)
  • 2 tbsp unsalted butter (Softened; for the frosting)
  • 1 cup powdered sugar (Sifted if lumpy; for the frosting)
  • 1 tsp vanilla extract (For the frosting)
  • fine salt (A small pinch, for the frosting)

Steps

    Warm the milk until it is just lukewarm, approximately 105–110°F / 40–43°C. Pour it into the bowl of a stand mixer and add the yeast and granulated sugar. Let it stand for about 5 minutes, until the yeast is hydrated and lightly foamy.

    Add the melted, slightly cooled butter and the egg to the milk mixture. Fit the mixer with the dough hook and mix briefly on low speed to combine.
