Ingredients

  • 400 g Belly Pork (diced 4cm)
  • 3 Spring Onions (sliced; whites and greens separated)
  • 5 Garlic Cloves (minced)
  • 1 Ginger (thumb size, minced)
  • 1.5 tbsp Light Brown Sugar
  • 1 tsp Chilli Flakes (optional)
  • 1 tsp MSG (optional)
  • 3 tbsp Soy Sauce
  • 1 tbsp Rice Vinegar
  • 300 ml Boiling Water
  • Honey (drizzle for garnish)
  • Coriander (chopped for garnish)
  • Sesame Seeds (for garnish)
  • Red Chilli (sliced for garnish)

Steps

    Place the diced pork belly into a cold pan.

    Bring the pan up to medium heat and cook for approximately 10 minutes to render out the fat and develop color on all sides of the pork.

    Add the white ends of the sliced spring onions, minced garlic, minced ginger, light brown sugar, chilli flakes, MSG, soy sauce, and rice vinegar to the pan.

    Stir fry the mixture for 1 to 2 minutes until fragrant.

    Pour in the boiling water and cover the pan with a lid.

    Simmer on low heat for 40 minutes, or until the water has evaporated and the pork is coated in a thick, sticky sauce.

    Garnish with a drizzle of honey, the sliced green ends of the spring onions, chopped coriander, sesame seeds, and sliced red chilli.

Notes

Starting with a cold pan helps render the maximum amount of fat from the pork belly without burning the meat.
