Ingredients

  • 40 Pepperoncini peppers (Greenish-yellow color; about 8-10 peppers per half-pint jar)
  • 5 cup White vinegar (5% acidity)
  • 1 cup Water
  • 2 Garlic cloves
  • 4 tsp Canning salt
  • 2 tbsp Sugar
  • 0.5 tsp Turmeric (For natural yellow color)
  • 0.5 tsp Dried rosemary
  • 0.5 tsp Dried oregano

Steps

    In a large pot, combine 5 cups of vinegar, 1 cup of water, 2 garlic cloves, 4 teaspoons of canning salt, 2 tablespoons of sugar, and 0.5 teaspoon each of turmeric, dried rosemary, and dried oregano.

    Bring the brine mixture to a boil and let it boil for 10 minutes while you prepare the peppers.

    Wash the pepperoncini peppers. Using a knife, place 3 to 4 small slits into each pepper to allow the brine to penetrate.

    Carefully pack the peppers into clean half-pint jars. You should be able to fit approximately 8 to 10 peppers per jar.

    Pour the hot brine into each jar, leaving 0.5 inch of headspace at the top.

    De-bubble the jars by running a tool around the inside edge to release trapped air; add more brine if needed to maintain the 0.5 inch headspace.

    Wipe the rims, place a new lid on each jar, and secure with a ring until finger-tight.

    Place the jars into a water bath canner filled with hot water. Ensure the water covers the jars by at least an inch.

    Bring the canner to a full boil and process the jars for 10 minutes.

    Turn off the heat and let the jars rest in the hot water for 5 minutes.

    Remove the jars from the canner and place them on a towel-lined surface to cool completely for 12-24 hours before checking the seals.

Notes

Pepperoncinis are best for canning when they are greenish-yellow. If they turn red, they will be sweeter but lose the traditional pickled flavor profile. You can use a pressure canner as a water bath canner as long as you do not lock the lid or bring it up to pressure.
