Peach-Banana Breakfast “Ice Cream”
A quick, no-churn frozen fruit treat made smooth and creamy with Greek yogurt and maple syrup or honey. Frozen bananas create a richer ice-cream-like texture, while omitting the banana produces a lighter sorbet-style dessert.

Ingredients
- 3 Peaches (Frozen; use peeled, pitted peach pieces)
- 1 Banana (Frozen and peeled; omit for a lighter sorbet-style treat)
- 0.333 cup Greek yogurt (Plain Greek yogurt)
- 0.333 cup Maple syrup or honey (Use 1/4 to 1/2 cup, according to taste)
Steps
- 1
Place the frozen peaches and frozen banana in the bowl of a food processor.
- 2
Pulse the frozen fruit until it is finely chopped and begins to look crumbly. Stop and scrape down the sides if pieces are collecting around the bowl.
- 3
Add the Greek yogurt and the maple syrup or honey to the food processor.
- 4
Blend on high until the mixture is completely smooth and creamy, pausing to scrape down the sides of the bowl as needed. Serve immediately for a soft-serve texture.
Notes
The recipe makes approximately 1 pint. Frozen fruit may be varied. Include the banana for a richer, creamier texture; omit it for a lighter sorbet-style treat. If the mixture is too thick for the food processor, pause and scrape the bowl rather than adding liquid unless necessary.
