Ingredients
- 2 cup shelled raw walnuts (Soaked in hot water for at least 2 hours, or overnight in the refrigerator, then drained)
- 0.5 cup cauliflower (Roughly chopped)
- 1 tbsp olive oil
- 0.5 cup white onion (Chopped)
- 1 tbsp garlic (Minced)
- 2 tsp dried parsley
- 1 tsp Italian seasoning
- 1 tsp black pepper
- 0.5 tsp dried fennel seeds
- 1 tsp smoked paprika
- 1 tsp red pepper flakes
- 1.5 tsp salt
- 1 tsp tomato paste
- 0.25 cup vegetable broth
- pizza crust (Use homemade dough, purchased fresh pizza dough, or flatbread)
- pizza sauce (Use enough to cover the crust)
- black olives (Sliced; quantity to taste)
- green bell pepper (Chopped or sliced; quantity to taste)
- red onion (Chopped or sliced; quantity to taste)
- vegan mozzarella cheese (Shredded; quantity to taste)
- vegan pepperoni (Optional additional topping; quantity to taste)
Steps
- 1
Soak the walnuts in hot water for at least 2 hours, or overnight in the refrigerator. Drain them thoroughly before using.
- 2
Preheat the oven and pizza steel to 425°F (220°C). Allow the steel to heat fully while preparing the toppings.
- 3
If making dough from scratch, prepare it according to your recipe. If using premade fresh dough, set it out and let it come to room temperature so it is easier to stretch.
- 4
Place the drained walnuts and chopped cauliflower in a food processor. Pulse in short bursts until the mixture has a coarse, crumble-like texture; do not process it into a smooth paste.
- 5
Warm the olive oil in a sauté pan over medium heat.
- 6
Add the chopped white onion and minced garlic to the pan. Cook, stirring occasionally, until lightly browned and fragrant.
- 7
Add the walnut-cauliflower grounds, dried parsley, Italian seasoning, black pepper, fennel seeds, smoked paprika, red pepper flakes, salt, tomato paste, and vegetable broth to the pan.
- 8
Cook the walnut mixture over medium heat until lightly browned and most of the liquid has cooked out. Stir as needed so the grounds brown evenly without burning.
- 9
While the walnut grounds cook, roll out the pizza dough or prepare the flatbread, and prepare the remaining toppings.
- 10
Spread pizza sauce over the crust or flatbread. Add the walnut sausage grounds, sliced black olives, green bell pepper, red onion, and shredded vegan mozzarella. Add vegan pepperoni if desired.
- 11
Transfer the assembled pizza to the preheated pizza steel and bake at 425°F (220°C) until the cheese is melted and the crust reaches your preferred level of crispness. Serve hot.
Notes
The source does not provide a dough recipe or exact quantities for the crust, sauce, vegetables, cheese, or optional pepperoni; add those toppings according to preference. For best results, use a fully preheated pizza steel and avoid over-processing the walnuts and cauliflower.
