Ingredients
- 500 g Ground chicken (chicken mince)
- 1 Red onion (finely chopped)
- 1 tbsp Ginger-garlic paste
- 1 tbsp Momo masala (or a blend of cumin, coriander, and turmeric)
- 1 tbsp Soy sauce
- 2 tbsp Vegetable oil (heated, to keep the filling juicy)
- Salt (to taste)
- 0.25 cup Cilantro (freshly chopped)
- 30 Momo wrappers (store-bought or homemade dough circles)

In a large mixing bowl, combine the ground chicken, finely chopped red onion, ginger-garlic paste, momo masala, soy sauce, and chopped cilantro.

Heat the vegetable oil until shimmering and pour it over the meat mixture. Season with salt to taste and mix thoroughly until well combined.

Take a momo wrapper and place a spoonful of the chicken filling in the center.

Pleat the edges of the wrapper to seal the momo into your desired shape (round or crescent), ensuring there are no gaps for the juices to escape.

Prepare a steamer by lightly greasing the steamer tray with oil to prevent sticking.

Arrange the momos in the steamer tray, leaving space between them so they don't stick together.

Steam the momos over boiling water for approximately 12 minutes, or until the wrapper is translucent and the chicken is fully cooked.

Serve hot with a spicy tomato-based momo achar (dipping sauce).
Notes
If you cannot find momo masala, use a mix of cumin, coriander, and a pinch of turmeric. Adding hot oil to the raw meat mixture is a key technique to ensure the filling remains juicy after steaming.
