Pineapple Hibiscus Agua Fresca
Mexican agua fresca made with blended pineapple pulp, honey, and an infusion of dried hibiscus flowers with pineapple peel. Served very cold with ice for a fruity, floral, and refreshing drink.

Ingredients
- 1 Pineapple (Washed and peeled; reserve the peel and remove the pulp)
- 30 g Dried hibiscus flowers (Adjust the amount to taste)
- Pineapple peel (The reserved peel from the pineapple; used for boiling and then discarded)
- 1.5 L Water (Divided between the blender and the infusion)
- 2 tbsp Honey (To sweeten the pineapple pulp; adjust to taste)
- 2 cup Ice (For serving)

Wash the pineapple very well under running water, scrubbing the entire surface. Peel it and reserve the peel; remove the pulp and cut it into pieces to make blending easier.

Place all the pineapple pulp in the blender. Add a splash of the water and blend until smooth and liquid.

Taste the blended pulp and add the honey. Blend again until the honey has completely dissolved. Set this mixture aside.

Place a pot on the stove and add the remaining water, the dried hibiscus flowers, and the reserved pineapple peel.

Bring the pot to a boil. Once boiling, cook for approximately 10 minutes, until the hibiscus has released its color and flavor and the peel has infused the water.

Remove the pot from the heat and strain the infusion to remove the hibiscus flowers and pineapple peel. Let the extract cool completely before mixing it with the pineapple.

Fill the glasses with ice. Add a portion of the sweetened pineapple pulp and pour the chilled hibiscus extract over it.

Stir each glass to combine the flavors and serve immediately, very cold.
