Healthy Banana Carrot Cake

- 2 bananas (mashed)
- 2 eggs (large)
- 0.5 cup Greek yogurt (adds tanginess and moisture)
- 3 tbsp maple syrup
- 2 cup oat flour (can be made by blending oats)
- 2 tsp baking powder
- 1 cup carrots (shredded)
- 6 dates (pitted and cut into small pieces; optional)
- 0.75 cup nuts (pecans or walnuts recommended; optional)
- 1 tsp cinnamon (optional)
- salt (a dash; optional)

Preheat your oven to 350°F (175°C).

In a large mixing bowl, mash two bananas until smooth.

Add two eggs to the mashed bananas and whisk together.

Stir in 1/2 cup of Greek yogurt and 3 tablespoons of maple syrup until well combined.

Add 2 cups of oat flour, 1 cup of shredded carrots, and 2 teaspoons of baking powder to the wet ingredients.

If using optional ingredients, fold in the 6 pitted and chopped dates, 3/4 cup of nuts, 1 teaspoon of cinnamon, and a dash of salt.

Line a loaf pan or cake pan with parchment paper.

Notes
For a frosting, a commenter suggests mixing Greek yogurt with maple syrup and vanilla extract. If you don't have oat flour, you can make your own by blending rolled oats in a high-speed blender until they reach a fine powder consistency.
