Ingredients

  • 300 g bread flour (about 2.5 cups)
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 50 g sweetener (granulated)
  • salt (a pinch)
  • 400 g 0% Greek yogurt (about 1.67 cups)
  • 1 egg yolk
  • 30 g light butter (melted, for filling)
  • 40 g brown stevia (30-50g range provided)
  • cinnamon (generous dusting)
  • 15 g light butter (for greasing the dish)
  • 45 g light cream cheese
  • 45 g protein powder (Ghost lifestyle recommended)
  • 1 tsp vanilla extract
  • sweetener (to taste, for frosting)
  • water (as needed for consistency)

Steps

    Preheat your oven to 180°C (375°F).

    In a large mixing bowl, combine the bread flour, baking powder, baking soda, 50g sweetener, and a pinch of salt. Mix well to ensure the leavening agents are evenly distributed.

    Add the 0% Greek yogurt and the egg yolk to the dry ingredients.

    Knead the mixture into a smooth dough ball. The egg yolk helps make the dough rich and moist.

    Roll the dough out on a lightly floured surface into a rectangle (or square) about one inch thick.

    Spread the 30g of melted light butter evenly over the surface of the dough.

    Sprinkle the brown stevia and a generous dusting of cinnamon over the buttered dough.

    Roll the dough up tightly into a log. Slice the log into 6 equal buns.

    Grease a baking dish with 15g of light butter. Place the buns into the dish and press down gently.

    Bake in the preheated oven for 25–30 minutes until golden brown.

    While the buns bake, prepare the frosting by mixing the light cream cheese, protein powder, vanilla extract, and sweetener to taste. Add water a little at a time until you reach your desired consistency. For a silky smooth finish, you can pour the frosting through a sieve.

    Remove the buns from the oven and spread the protein frosting over them while they are still warm.

Notes

Storage: Store in the fridge once cooled. Reheating: Microwave for 30–60 seconds before serving to restore the soft texture. Using a high-quality whey protein like Ghost Cinnabon flavor can enhance the taste of the frosting.
