A rich and creamy Kapampangan dish featuring shrimp, quail eggs, and sweet corn in a luscious milky sauce. This version uses whole kernel corn for extra sweetness and crunch.

Ingredients

  • 2 tbsp Butter (or margarine; divided for sautéing)
  • 0.5 kg Shrimp (cleaned, heads removed and reserved)
  • 150 g Ham (diced)
  • 1 cup Carrots (finely diced)
  • 0.5 cup Green peas
  • 1 can Mayon Premium Whole Kernel Corn (approx. 425g)
  • 1 can Evaporated milk (large can, approx. 370ml)
  • 1 pack All-purpose cream (250ml)
  • 0.25 cup Water (adjust for desired consistency)
  • 1 Shrimp bouillon cube
  • 24 Quail eggs (boiled and peeled)
  • Black pepper (generous amount, freshly cracked)

Steps

    Melt butter or margarine in a pan over medium heat.

    Add the half kilogram of shrimp to the pan. Sauté until they turn orange/red, then remove the shrimp and set aside.

    In the same pan, melt more butter or margarine and add the reserved shrimp heads. Sauté for about 2 minutes until the juices are released, then remove the heads and set the extracted juice aside.

    Using the same pan, sauté the diced ham until cooked, then set aside.

    In the same pan, sauté the carrots first, then add the green peas.

    Add the Mayon Whole Kernel Corn to the vegetables and sauté briefly.

    Return the cooked ham to the pan and mix with the vegetables.

    Pour in one large can of evaporated milk and one pack of all-purpose cream. Stir well to combine.

    Add a small amount of water, one shrimp bouillon cube, and the reserved shrimp head juice. Bring to a simmer.

    Allow the sauce to cook and thicken for 7 to 10 minutes, stirring occasionally.

    Add the boiled quail eggs and the cooked shrimp back into the pan.

    Season with a generous amount of black pepper. Stir to ensure everything is well coated in the creamy sauce and serve hot.

Notes

The author notes that salt is not necessary as the shrimp cube, ham, and shrimp juice provide enough savory flavor. For a more traditional Kapampangan touch, some people also add diced pork liver (atay).
