Air Fried Shrimp Bites
These crispy, high-protein shrimp bites are made by rolling a seasoned minced shrimp filling in rice paper and air frying until golden. They are served with a spicy, savory chili crisp dipping sauce.

Ingredients
- 0.5 lb raw shrimp (washed, deveined, and minced)
- 2 green onion (chopped)
- 0.25 cup carrot (shredded)
- 2 clove garlic (minced)
- 1 tbsp hoisin sauce (can substitute with oyster sauce)
- 0.25 tsp white pepper
- 1 tsp cornstarch
- 4 sheet rice paper
- cooking oil spray (to coat the bites before air frying)
- 2 tbsp soy sauce (for dipping sauce)
- 1 tbsp chili crisp (for dipping sauce)
- 1 tsp water (for dipping sauce)
- 1 tsp sesame seeds (for dipping sauce)
- 0.5 tsp sugar (for dipping sauce)

Mince the raw, washed, and deveined shrimp until it forms a paste-like consistency and add it to a mixing bowl.

Add the chopped green onion, shredded carrot, minced garlic, hoisin sauce (or oyster sauce), white pepper, and cornstarch to the bowl with the shrimp.

Mix the ingredients thoroughly until well combined.

Dip a sheet of rice paper into lukewarm water, drip off the excess water, and lay it flat on a cutting board.

Place a portion of the shrimp filling onto the rice paper in a thin horizontal line.

Fold the sides of the rice paper inward, then fold the bottom edge over the filling and roll it up tightly but gently to avoid tearing the fragile paper.

Repeat the process for the remaining filling and rice paper sheets, then cut the rolls into bite-sized pieces.

Line the air fryer basket with parchment paper and lay the shrimp bites down gently in a single layer.

Lightly spray the tops of the bites with cooking oil.

Air fry at 370°F (188°C) for 11 minutes until the rice paper is crispy.

While the bites are cooking, prepare the dipping sauce by whisking together the soy sauce, chili crisp, water, sesame seeds, and sugar in a small bowl.

Notes
Be careful when handling the wet rice paper as it is very fragile and can tear easily if pulled too hard. If you don't have hoisin sauce, oyster sauce is a great substitute for the filling.
