Ingredients

  • 1 cup glutinous rice (soaked in room temp water for 30 minutes and washed)
  • 1 cup water (for cooking the rice)
  • 0.5 cup full fat coconut milk (the liquid portion from the can)
  • 3 tbsp sugar
  • 0.5 cup coconut cream (skimmed from the top of the coconut milk can; for dipping)
  • 2 ripe mango (sliced)

Steps

    In a medium bowl, soak your glutinous rice in room temperature water for 30 minutes.

    Wash the rice a few times until the water runs clear, then drain.

    Cook the rice in a rice cooker or on the stove. If using the stove, place rice and 1 cup of water in a pot and turn heat to high. Once bubbling, close the lid and simmer until the water has been fully absorbed, roughly 12-15 minutes.

    Open a can of full fat coconut milk and skim the thick top layer of coconut cream into a small bowl. Set this aside to use as a dipping sauce later.

    Pour 1/2 cup of the remaining coconut milk into a saucepan and add 3 tablespoons of sugar. Stir over heat until the sugar is dissolved and the milk is heated thoroughly.

    Once the rice is fully cooked, pour the hot coconut milk mixture over the sticky rice and mix well.

    Leave the rice covered for 20 minutes so the coconut milk gets fully absorbed.

    Quickly dip a rice paper sheet into a shallow bowl of warm water and lay it flat on a large plate.

    Sprinkle sesame seeds onto the rice paper, followed by a few slices of mango, then a portion of the coconut sticky rice.

    Fold in the sides of the rice paper, then fold up from the bottom and roll up completely like a burrito.

    Repeat with the remaining rice paper sheets and serve with the reserved coconut cream as a dipping sauce.

Notes
