Ingredients

  • 250 g Bacon (Finely chopped)
  • 1 Onion (1 small onion or 1/2 large onion, diced)
  • 1 tsp Salt
  • Black pepper (To taste)
  • 0.25 cup Brown sugar or ground panela (Brown sugar or ground panela may be used)
  • 1 copita Rum (Approximately 45 ml; the author indicates that it should not be substituted)
  • 0.25 cup Honey
  • 400 g Cream cheese (At room temperature)
  • 0.25 cup Parmesan cheese (Grated)
  • Scallions (To taste, chopped)

Steps

  1. 1

Prepare all the ingredients. Finely chop the bacon, dice the onion, and bring the cream cheese to room temperature so it mixes easily.

  2. 2

Place the bacon in a large skillet over medium heat. Cook, stirring occasionally, until golden and most of the fat has rendered, approximately 8-10 minutes.

  3. 3

Add the diced onion to the skillet with the bacon. Cook for 5-7 minutes, until the onion is soft and lightly golden.

  4. 4

Add the salt and black pepper. Mix well to distribute the seasonings.

  5. 5

Add the brown sugar or ground panela and the honey. Stir until incorporated and the mixture begins to thicken.

  6. 6

Carefully pour the rum into the skillet. Cook over medium-low heat until the alcohol evaporates and the mixture becomes glossy, thick, and jam-like, approximately 5-8 minutes. Remove from the heat and let cool completely.

  7. 7

While the jam cools, place the room-temperature cream cheese in a bowl. Add the Parmesan cheese and mix until smooth and homogeneous.

  8. 8

When the bacon jam is cool or just slightly warm, fold it into the cheese mixture. You can mix it in completely or leave visible streaks to preserve the contrast in textures.

  9. 9

Taste the dip and adjust the salt, pepper, honey, or sweetness according to your preference, as recommended by the author.

  10. 10

Finish with chopped scallions to taste. Serve at room temperature or slightly chilled, accompanied by crackers, toasted bread, crostini, or vegetables.
