Ingredients
- 500 g Chicken (cut into small pieces)
- 8 Green Chilies (pachai milagai; adjust to spice preference)
- 1 tsp Fennel Seeds (sombu)
- 1 inch Cinnamon Stick (pattai)
- 2 sprigs Curry Leaves (karuveppilai)
- 2 Onions (finely chopped)
- 1 tbsp Coriander Powder (kothamalli thool)
- 1 handful Fresh Coriander (kothamalli; chopped for garnish)
- 2 tbsp Oil (for frying)
Steps
- 1
Heat oil in a heavy-bottomed pan or kadai.
- 2
Add fennel seeds (sombu), cinnamon stick (pattai), and fresh curry leaves to the hot oil and sauté until fragrant.
- 3
Add the finely chopped onions and sauté until they become translucent and slightly golden.
- 4
Incorporate the green chilies (pachai milagai) and continue to sauté to release their heat.
- 5
Add the chicken pieces to the pan and stir well to coat with the aromatics.
- 6
Add coriander powder (kothamalli thool) and any other ground spices mentioned, stirring to combine.
- 7
Cook the chicken until tender and the moisture has evaporated, leaving a dry fry (varuval) consistency.
- 8
Garnish with fresh chopped coriander leaves before serving.
Notes
This dish is a great accompaniment for rice with rasam or chapati. The spice level is primarily driven by the green chilies, so adjust the quantity based on their heat level.
