- 1 cup chicken broth

In a pot, combine chicken breasts, bay leaves, 1/2 yellow onion, 2 garlic cloves, and 1/2 tbsp chicken bouillon. Cover with water and boil until the chicken is cooked through.

Remove the chicken from the pot and shred it using two forks. Set aside.

In a blender, combine the tomatoes, chipotle peppers, 1/4 yellow onion, 2 garlic cloves, 2 tbsp chicken bouillon, and 1 cup chicken broth. Blend until smooth.

In a large skillet, sauté the sliced 1/2 yellow onion until translucent and soft.

Add the shredded chicken to the skillet with the sautéed onions, then pour in the blended sauce.
