Ingredients

  • 3 russet potatoes (cut into bite-sized pieces)
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 lb ground beef
  • 1 onion (small, diced)
  • 1 packet taco seasoning
  • 10 oz diced tomatoes with green chilies (1 can)
  • 0.5 cup shredded cheddar cheese
  • Gordo’s Original Cheese Dip (warmed, for drizzling)

  • jalapeños (optional topping)
  • diced tomatoes (optional topping)
  • chopped cilantro (optional topping)
  • hot sauce (optional topping)

Steps

    Toss the bite-sized potato pieces with the olive oil, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.

    Cook the seasoned potatoes in the air fryer at 400°F (200°C) for about 25 minutes, shaking the basket halfway through, until golden brown and crispy. Alternatively, bake them in the oven at 400°F for 25–30 minutes.

    While the potatoes are cooking, brown the ground beef and diced onion in a large skillet over medium heat.

    Drain any excess grease from the skillet.

    Stir in the taco seasoning and the can of diced tomatoes with green chilies.

    Let the meat mixture simmer for 2–3 minutes.

    Add the crispy potatoes to the skillet and stir to combine with the meat mixture.

    Sprinkle the shredded cheddar cheese over the top, cover the skillet, and let it sit until the cheese is melted.
