Ingredients

  • 1 tbsp butter (softened, divided)
  • 5 medium shrimp (peeled and deveined, tail removed)
  • 0.5 tsp garlic granules
  • 2 sandwich bread
  • 1 slice Colby Jack cheese
  • 1 slice sharp Cheddar cheese

Steps

    Place a large skillet over medium heat.

    Add 1 teaspoon of the butter to the skillet.

  3. 3

    Add the shrimp to the skillet and sprinkle them with garlic granules.

    Cook until shrimp are pink, opaque, and slightly curled into a loose “C” shape, about 1 to 2 minutes per side, depending on size.

    Remove the shrimp to a cutting board and chop roughly.

    Spread a thin layer of the remaining softened butter on one side of each bread slice.

    Place one slice of bread, buttered side down, in the same skillet used for the shrimp.

    Place the slice of Colby Jack cheese on the bread, then top with the chopped shrimp pieces.

    Place the Cheddar cheese slice on top of the shrimp.

    Place the remaining bread slice on top of the sandwich with the buttered side facing up.

    Cook until the bread is golden brown on the bottom, about 2 to 3 minutes.

    Carefully turn the sandwich over with a spatula.

    Cook the other side until golden and the cheese is fully melted, another 2 to 3 minutes.

    If the cheese is not fully melted by the time the sandwich is golden, cover the skillet for 30 to 60 seconds to trap the heat.

Notes

Cook's Note: For a spicy kick, use Cajun seasoning in place of garlic granules.
