Ingredients

  • 24 oz Fresh lo mein noodles or yellow Asian wheat noodles (Dried spaghetti or linguine may be substituted; use noodles that are not too thin.)
  • 6 tbsp Unsalted butter
  • 10 cloves Garlic (Finely mince; do not grate or use a garlic press, which can make the flavor harsh.)
  • 2 tbsp Maggi seasoning (Bragg's Liquid Aminos may be substituted.)
  • 1 tbsp Oyster sauce
  • 0.5 cup Grated Parmesan cheese (Optional.)
  • 0.5 cup Reserved noodle cooking water (Reserve before draining; use as needed to loosen the sauce.)

Steps

  1. 1

Bring a large pot of well-salted water to a boil. Cook the noodles according to the package directions until just tender but still slightly chewy. Before draining, reserve about ½ cup of the cooking water, then drain the noodles.

  2. 2

While the noodles cook, finely mince the garlic with a knife. Avoid grating it or putting it through a garlic press, because those methods release more pungent compounds and can make the finished noodles harsh.

  3. 3

Melt the butter in a large skillet or wok over medium-low heat. Add the minced garlic and cook gently for about 2 to 3 minutes, stirring frequently, until fragrant and softened but not browned.

  4. 4

Add the Maggi seasoning and oyster sauce to the skillet. Stir until the seasonings are evenly incorporated into the garlic butter and heated through.

  5. 5

Add the drained noodles to the skillet. Toss thoroughly with tongs so the noodles are coated in the garlic butter and seasonings. Add reserved noodle water a tablespoon or two at a time if the noodles seem dry, tossing until glossy and lightly sauced.

  6. 6

Remove the skillet from the heat. Add the grated Parmesan, if using, and toss until melted into the noodles. Taste and adjust the seasoning if needed, then serve immediately.

Notes

The published page indicates that the complete recipe requires membership, so quantities and method details were reconstructed from the available description and standard preparation of this dish. Milk Street recommends fresh lo mein noodles or other not-too-thin yellow Asian wheat noodles; dried spaghetti or linguine are suitable substitutes. Use jarred minced garlic only at your discretion, as it may have stale or off flavors.
