Ingredients

- 3 Onions (finely chopped)
- 1 tsp Salt (or to taste)
- 1 tbsp Garlic paste
- 1 tbsp Ginger paste
- 0.5 tsp Turmeric powder
- 1.5 tbsp Mixed curry powder (Latif uses a bespoke mix, but standard Madras or mild curry powder works)
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 1 tsp Chili powder (adjust to heat preference)
- 1 tbsp Tomato puree
- 1.5 lb Chicken breast (cut into bite-sized pieces)
- 0.5 cup Water (as needed for consistency)
- Fresh coriander (chopped for garnish)

Heat the vegetable oil in a large pan or pot over medium-high heat.

Add the finely chopped onions and the salt to the pan. Sauté the onions, stirring frequently, until they are soft, translucent, and starting to turn a light golden brown.

Add the garlic paste and ginger paste to the onions. Stir and cook for 1-2 minutes until the raw smell of the garlic and ginger disappears.

Reduce the heat to medium-low. Add the turmeric, mixed curry powder, cumin powder, coriander powder, and chili powder. Stir well to coat the onions in the spices.

Add the tomato puree and a splash of water to prevent the spices from burning. Cook the spice paste (masala) for 3-5 minutes, stirring occasionally, until the oil begins to separate from the mixture.

Add the chicken pieces to the pan. Increase the heat to medium and stir well to ensure every piece of chicken is thoroughly coated in the masala.

Cover the pan with a lid and let the chicken cook in its own juices for about 10 minutes, stirring occasionally.

Remove the lid and add about half a cup of water (or more depending on how much sauce you prefer). Bring to a gentle simmer.

Continue to cook uncovered for another 10-15 minutes, or until the chicken is cooked through and the sauce has thickened to your desired consistency.

Taste and adjust the salt if necessary. Garnish with a generous handful of fresh chopped coriander before serving.
Notes
For the best results, ensure the onions are cooked down properly as they provide the body of the sauce. If you prefer a smoother sauce, you can blend the onion and spice mixture before adding the chicken. Pair with basmati rice or fresh naan bread.
