Ingredients

  • 400 g Spaghetti
  • 0.5 TL Salt (For the pasta water and sauce; also use plenty of salt for the pasta water.)
  • 1 Handvoll Fresh parsley (Finely chopped, for sprinkling)
  • 2 Zweige Fresh thyme (Leaves picked from the stems)
  • 150 g Butter (Softened)
  • 100 ml Cream
  • 2 EL Fresh lemon juice
  • 1 EL Whole-grain mustard (Coarse-grain mustard)
  • 1 TL Garlic salt
  • 1 TL Smoked paprika
  • Cayenne pepper (1 pinch)
  • 0.5 TL Chili flakes
  • 0.5 TL Paprika flakes
  • 0.5 TL Black pepper
  • Pasta cooking water (Some reserved cooking water to thin the sauce)

Steps

    Bring plenty of water to a boil in a large pot and salt it. Cook the spaghetti according to the package instructions until al dente, so it remains slightly firm to the bite.

    Reserve some of the cooking water when draining the spaghetti and set it aside. Drain the pasta.

    Meanwhile, wash the parsley, chop it finely, and set it aside.

    Strip the thyme leaves from the stems and set them aside as well.

    Heat a large skillet over low heat. Add the softened butter and cream, and let the butter melt slowly without heating the mixture too intensely.

    Add the lemon juice, whole-grain mustard, garlic salt, smoked paprika, cayenne pepper, chili flakes, paprika flakes, thyme leaves, salt, and black pepper to the skillet.

    Stir everything thoroughly until a smooth, creamy, and spicy sauce forms.

    Add the drained spaghetti to the skillet and toss thoroughly with the sauce until all the noodles are evenly coated.

    If the sauce is too thick, gradually stir in some of the reserved pasta water until the desired creamy consistency is reached.

    Divide the cowboy butter noodles among plates and sprinkle with the finely chopped parsley immediately before serving.

Notes

If prepared cowboy butter is already available, it can be melted in the skillet and then mixed with the cream. The noodles should not sit in the sauce for too long, as they will otherwise absorb liquid and cause the sauce to thicken.
