Chocolate Strawberry Pancake Bowls

Ingredients
- 0.25 cup low-fat Greek yoghurt
- 0.25 cup Tigernut milk (or milk of choice)
- 1 egg
- 1 tbsp maple syrup
- 0.25 cup protein powder (vanilla or chocolate flavor)
- 2 tbsp whole meal flour
- 1.5 tbsp cocoa powder
- 0.5 tsp baking powder
- salt (a pinch)
- 2 strawberries (sliced)
- 1.5 squares dark chocolate (or chocolate chips)

Preheat your oven to 180°C (350°F) fan-forced.

In a small oven-safe ramekin or bowl, whisk together the Greek yoghurt, milk, egg, and maple syrup until the mixture is smooth.

Add the protein powder, wholemeal flour, cocoa, baking powder, and salt to the wet ingredients.

Stir the mixture until just combined, being careful not to overmix the batter.

Top the batter with the sliced strawberries and the chocolate squares or chips.

Bake for 22-24 minutes, or until the top is set and the centre feels slightly springy to the touch.

Remove from the oven and let it cool for 10 minutes before serving.
