Ingredients
- 3 cup all-purpose flour (plus 2 tablespoons)

- 1 tsp baking soda
- 0.5 tsp salt
- 0.75 cup unsalted butter (softened)
- 1 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp heavy cream
- 1.5 tbsp softened butter (for cinnamon spread)
- 3 tbsp brown sugar (for cinnamon spread)
- 1 tsp cinnamon (for cinnamon spread)
- 0.5 tsp cornstarch (for cinnamon spread)
- cinnamon sugar (for rolling)
- 0.5 cup powdered sugar (for glaze)
- 1 tbsp water (1-2 tbsp for glaze)
- 0.125 tsp vanilla paste (or extract for glaze)

Cream together the 3/4 cup softened unsalted butter and 1 cup sugar well until light and fluffy.

Add in the 2 eggs, 1 tsp vanilla extract, and 1 tbsp heavy cream to the butter mixture and mix until combined.

In a separate bowl, whisk together the 3 cups + 2 tbsp flour, 3/4 tsp cream of tartar, 1 tsp baking soda, and 1/2 tsp salt.

Add the wet ingredients to the dry ingredients and mix until just combined; do not overmix.

Spread the dough into a rectangle shape and set it in the fridge to chill for 10 minutes.

While the dough chills, prepare the cinnamon spread by mixing together 1 1/2 tbsp softened butter, 3 tbsp brown sugar, 1 tsp cinnamon, and 1/2 tsp cornstarch.

Spread the cinnamon mixture over the semi-chilled rectangle of dough, leaving about an inch of space at the top edge.

Roll the dough up tightly starting from the bottom, then chill the log for another 20 minutes.

Notes
