Ingredients

  • 180 g all purpose flour (plus extra for dusting)
  • 340 g low fat cottage cheese
  • 1 egg (large)
  • 1 egg yolk (large)
  • 64 g protein powder (for the dough)
  • 1 tsp vanilla extract (for the dough)
  • 0.5 tbsp baking powder
  • 0.2 cup swerve brown sugar (1/5 cup)
  • cinnamon (to taste)
  • 90 g lite cream cheese
  • 1 tsp vanilla extract (for the frosting)
  • 16 g protein powder (OPTIONAL for frosting)
  • 0.25 cup powdered monk fruit

Steps

    Preheat your oven to 350°F (175°C).

    Place the wet dough ingredients (cottage cheese, egg, egg yolk, and vanilla extract) into a blender and blend until completely smooth.

    Pour the blended wet mixture into a large mixing bowl.

    Add the dry ingredients (all purpose flour, protein powder, and baking powder) to the bowl and mix until fully combined.

    Dump the dough onto a floured, flat surface. The dough will be sticky, so sprinkle a bit of extra flour on top and gently pat it down to shape it.

    Pour the cinnamon and swerve brown sugar mixture on top of the dough and spread it evenly.

    Roll the dough into a log and cut into 8 even pieces, then place them in a baking dish.

    Bake in the preheated oven for 25 minutes.

    While the rolls are baking, prepare the icing by mixing the lite cream cheese, vanilla extract, optional protein powder, and powdered monk fruit in a bowl until no lumps remain.

    If the icing is too thick or lumpy, add a small splash of milk or water and whisk vigorously until smooth.

    Allow the cinnamon rolls to cool slightly after baking, then smother them with the prepared icing and serve.

Notes

TIP: As this uses protein powder and sugar-free sweeteners, use at your discretion. Some people are more sensitive to the taste than others, so you are welcome to reduce the protein powder and sweetener content. If the dough is too sticky to handle, use extra flour on your hands and surface, but be careful not to over-flour as it can make the rolls dry.
