Ingredients
- 180 g all purpose flour (plus extra for flouring surface)
- 80 g mashed banana (for the dough)
- 340 g greek yogurt (nonfat recommended for macros)
- 64 g protein powder (about 2 scoops; for the dough)
- 1 tsp vanilla extract (for the dough)
- 0.5 tbsp baking powder
- 30 g swerve brown sugar (or other sugar substitute)
- 2.5 tbsp cinnamon (around 2-3 tbsp)
- 60 g lite cream cheese
- 30 g mashed banana (for the frosting)
- 1 tsp vanilla extract (for the frosting)
- 16 g protein powder (1/2 scoop; optional for extra protein in frosting)
- 50 g powdered monk fruit
Steps
- 1
Preheat your oven to 350°F (175°C).
- 2
In a blender, combine the wet dough ingredients (80g mashed banana, 340g Greek yogurt, and 1 tsp vanilla extract) and blend until completely smooth.
- 3
Transfer the blended wet mixture to a mixing bowl. Add the dry dough ingredients (180g flour, 64g protein powder, and 1/2 tbsp baking powder) and mix with a spoon until fully incorporated. Note: The dough will be very sticky.
- 4
Prepare a flat surface with a generous layer of flour to prevent sticking. Place the dough onto the floured surface and sprinkle more flour on top of the dough.
- 5
Gently pat the dough down until it is about 1/4 inch thick. Do not rub or roll the dough; simply pat it and add more flour to any sticky spots that appear.
- 6
Spread the cinnamon sugar mixture (30g Swerve brown sugar and 2-3 tbsp cinnamon) evenly over the surface of the dough.
- 7
Cut the dough into strips and roll them up into individual cinnamon rolls.
- 8
Bake for 25 minutes. The rolls should be firm to the touch but not golden brown; if they turn golden brown, they are likely over-baked.
- 9
While the rolls are baking, prepare the frosting by mixing 60g lite cream cheese, 30g mashed banana, 1 tsp vanilla extract, 16g protein powder (if using), and 50g powdered monk fruit in a bowl until no lumps remain. If the frosting is too thick, add a small splash of milk or water and whisk.
- 10
Allow the cinnamon rolls to cool slightly, then generously top them with the banana cream cheese frosting.
Notes
The dough is intentionally sticky to keep the rolls moist; use plenty of flour on your hands and surface. If you are sensitive to the taste of sugar-free sweeteners or protein powder, you can reduce the amounts or substitute with real sugar, though this will change the nutritional values.
