Ingredients

  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 onion (medium, diced)
  • 2 carrots (diced)
  • 3 celery stalks (diced)
  • 4 garlic cloves (minced)
  • 0.5 tsp sweet paprika
  • salt (to taste)
  • black pepper (to taste)
  • 3 tbsp all-purpose flour
  • 4 cup chicken broth
  • 1 tbsp apple cider vinegar
  • 1.5 lb boneless, skinless chicken thighs
  • 1 lb baby potatoes (quartered)
  • 1 cup green beans
  • 0.5 cup heavy cream
  • 0.5 tsp dried sage
  • 0.5 tsp dried thyme
  • 0.5 tsp dried oregano
  • fresh parsley (for serving)
  • lemon wedges (for serving)

Steps

  1. 1

In a large pot over medium heat, add 2 tbsp butter and 2 tbsp olive oil.

  2. 2

Add the diced onion, diced carrots, diced celery, minced garlic, 1/2 tsp sweet paprika, and a big pinch of salt. Cook until the vegetables have softened and are slightly browned.

  3. 3

Stir in 3 tbsp of all-purpose flour and cook briefly, about 1 minute, to remove the raw flour taste.

  4. 4

Pour in 4 cups of chicken broth and 1 tbsp of apple cider vinegar, stirring constantly until the mixture is smooth and slightly thickened.

  5. 5

Add the chicken thighs, quartered potatoes, green beans, 1/2 cup heavy cream, 1/2 tsp dried sage, 1/2 tsp dried thyme, 1/2 tsp dried oregano, and additional salt and pepper to taste.

  6. 6

Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cook partially covered until the chicken is cooked through, approximately 20 minutes.

  7. 7

Remove the chicken thighs from the pot and shred them using two forks.

  8. 8

While the chicken is being shredded, fully cover the pot and continue cooking the vegetables until they are completely tender.

  9. 9

Return the shredded chicken to the pot and stir to combine. Season with additional salt and pepper to taste.

  10. 10

Serve warm, garnished with fresh parsley and lemon wedges if desired.

Notes

The apple cider vinegar is used to provide depth of flavor. While heavy cream isn't traditional for all stews, it helps tie the flavors together in this recipe. This recipe is noted for being highly customizable—feel free to use what you have in your fridge.
